Upcycled foods use ingredients that would otherwise go to waste, and new research from the University of Otago suggests that most New Zealanders would give them a try. The team surveyed 1001 shoppers and found that only 6 per cent of people would avoid upcycled products. In fact, 35 per cent would prefer to buy these products over normal, non-upcycled goods. The authors say more awareness of food waste and the benefits of upcycling could pave the way for food producers looking to launch upcycled products in NZ.
