Huhu grubs: a protein-packed future food for Aotearoa?

Huhu grub farms could boost food security and the New Zealand economy, but more research is needed to figure out viable commercial farming methods. University of Otago researchers say there is much to learn from traditional Māori harvesting methods and commercial weevil farms overseas, but we also need to get more consumers on board with the idea of harnessing this native, nutrient-rich grub as a sustainable protein source.
